A quick and simple dish, with fresh Manila clams in Chinese Shaoxing wine for a delicious and light main course Drunken Manila Clams Servings: 2-3 Prep Time: 10mins Cooking Time: 20mins Total Time: 30mins Ingredients: Sesame oil 1 (2”) chunk fresh ginger (peeled, julienned) 1 pound fresh Manila clams 1½ cups Chinese Shaoxing wine 2 scallion stalks (julienned) Sea salt and white pepper Directions: 1. Heat a splash of sesame oil in a wok. Add the ginger and sauté for a couple of minutes until browned. 2. Toss in the clams and pour in the wine. Cover with a lid, cook for a few minutes then uncover and add the scallions. Season with salt and white pepper, stir quickly. 3.
